Blue Cheese Sauce
Ingredients
25g butter
1 small shallot
1/2 cup Tatua Culinary and Whipping Cream
100ml beef stock
1 tsp Dijon mustard
70g good quality blue cheese
Salt
Pepper
1 tbsp freshly chopped chives
Method
- Melt the butter in a saucepan or pan.
- Sauté the shallots until golden brown.
- Add the beef stock and mustard. Cook out for one minute.
- Pour in the Tatua Culinary and Whipping Cream.
- Crumble in the blue cheese and stir until fully melted and combined.
- Add the chives.
- Pour over steak.
