Lettuce Wedges With Zesty Sour Cream & Croutons

Ingredients

1 iceberg lettuce

Dressing:

250g (1 cup) Tatua Sour Cream

2 Tbsp mayonnaise

1 clove of garlic, crushed

3 Tbsp lemon juice

2 Tbsp lemon zest

1/2 tsp salt

1 tsp cracked pepper

1/2 cup water

Topping:

1/4 cup chopped chives

5-6 rashers of streaky bacon, diced & cooked

1 cup of croutons

Method

  1. Prepare the lettuce by removing the outer leaves and rinsing the head under cold water.
  2. Cut the end to remove the hard stem, then chop lettuce in half, and in half again, so that you have 4 wedges. 
  3. Prepare the dressing by combining the Tatua Sour Cream with all dressing ingredients in a bowl, mixing thoroughly.
  4. Place each lettuce wedge onto a plate, generously drizzle over the dressing, and top with the chives, cooked bacon and croutons.
  5. Serve immediately and enjoy!
